Description

Monte Cielo Coffee Gourmet Dark Roast is produced in Finlandia in the Quindío province of Colombia.

This 18-acre farm is between 1585 and 1700 m (meters above sea level).

The farm is enclosed by the west side of Cordillera Central of the Andes Mountain resembling a “cielo alto place”.

These favorable conditions -volcanic soils and altitude- enhance its quality and refined taste making Montecielo an exceptional origin coffee.

By contrast, coffee trees will be healthier on soil rich in active organic matter, they will have a better leaf area-to-fruit ratio leading to better quality and unique cup characteristics.

Monte Cielo Coffee Gourmet Dark Roast is proud to present its exclusive Gourmet Dark Roast, a coffee that encapsulates the pure essence of Filandia, Quindío, Colombia. Meticulously cultivated at impressive altitudes of 5050 to 6000 feet, this 100% Arabica coffee benefits from a unique climate and geography that bestow unparalleled characteristics.

Our selection includes the finest varieties of Caturra, Castillo, and Colombia beans, harvested between September and December, with a second flowering from March to June, ensuring exceptional freshness and quality.

The production process of our Gourmet Dark Roast begins with a meticulous washing and a controlled fermentation of 22 hours, followed by sun-drying on patios that preserve the integrity and nuances of each bean.

This careful process highlights a distinctive flavor profile, with deep notes of chocolate, vanilla, and almond, promising a rich and immersive sensory experience.

We invite connoisseurs and coffee lovers to discover the magic of Monte Cielo Coffee Gourmet Dark Roaste, where each cup is a tribute to Colombia’s rich coffee tradition

Introduction to Colombian Coffee The Heritage of Colombian Coffee

Origins and Tradition

Colombian coffee, with its reputation for excellence on the global stage, is the product of a rich cultural and geographical heritage.

This legacy of Monte Cielo Coffee Gourmet Dark Roast begins on the Andean slopes of Colombia, where coffee is cultivated in small plots that stretch across the country’s vast topography.

The history of coffee in Colombia is a narrative of passion and precision, where each generation has passed down its knowledge and techniques to cultivate beans that not only meet but exceed global market expectations.

The unique combination of tropical climate, high mountains, and rich volcanic soils provides Monte Cielo Coffee Gourmet Dark Roast the perfect environment for growing coffee, allowing Colombia to produce beans with rich and complex flavors that are difficult to replicate elsewhere.

The Importance of Altitude

The specific altitude at which coffee is cultivated in regions like Quindío varies significantly and has a direct impact on temperature, luminosity, and humidity – key factors that influence coffee metabolism.

At altitudes of 5050 to 6000 feet, conditions are ideal for Monte Cielo Coffee Gourmet Dark Roast slow and uniform grain growth, allowing for a more complete development of natural sugars and organic acids in the coffee.

This slow maturation translates into a denser bean with more complex and subtle flavor profiles, distinguishing Colombian coffee for its body and balanced acidity, as well as its aromatic notes reminiscent of caramel, nuts, and fruits.

Varieties and Characteristics

Within Colombia, 100% Arabica coffee varieties such as Caturra, Castillo, and Colombia are highly valued for their adaptability to local conditions and disease resistance. However, it’s their flavor diversity that truly makes them stand out.

The Caturra variety is known for its body and bright acidity, while Castillo brings notes of cocoa and sweet fruits, and the Colombia variety is appreciated for its balance and sweetness.

The careful selection of these varieties for Monte Cielo Coffee Gourmet Dark Roast ensures a cup of coffee with a flavor complexity that is both rich and nuanced, offering notes of chocolate, vanilla, and almond that delight the palate.

The Post-Harvest Process

The processing of Monte Cielo Coffee Gourmet Dark Roast is as important as its cultivation. After harvest, the beans undergo a rigorous washing process followed by a controlled fermentation of 22 hours, which is crucial for developing their flavor profile.

This fermentative process not only cleanses the bean but also initiates a chemical transformation that enhances the coffee’s aromatic and flavor qualities.

Sun-drying on patios is the final touch that ensures the preservation of these characteristics for Monte Cielo Coffee Gourmet Dark Roast,  resulting in a coffee with exceptional flavor clarity and richness that captures the essence of the Colombian terroir.
